“Done by dinner” refrigerator cucumbers

Have some extra cucumbers that you don’t know what to do with? This quick and easy refrigerator cucumber brine can be prepared in under 15 minutes and it’s delicious!

For one cucumber, mix 1 cup water, 1/3 cup of vinegar(white, apple, or rice), 2 TBS sugar, 2 TSP salt and bring to a boil.

Once boiled remove from heat and allow to cool

Prepare the cucumber by slicing in thin slices. Add any onions or bell peppers for extra flavor and color.

*Optional: Salt cucumber, onion, and pepper mix in a bowl and let rest for 1 hour to drain all the water out. This will allow for more of the brine to absorb into the veggies. Strain out the liquid that remains and rinse.

Find a container and pour the brine over the veggie mix. Store in the refrigerator till dinner time. These are ready to enjoy immediately, although the longer you wait the more of the flavor will absorb. Leave a comment below if you try out my recipe!
